Lemon Garlic Rosemary Chicken
Posted on June 09th, 2010 in Main Dishes
We have company staying over from out of town, so we decided to fire up the grill and make some chicken. I poked around the fridge and cupboard and came up with a fabulous marinade that I decided needs to be shared.
I must confess – I didn’t measure nary a one of these ingredients. Play with it til it looks good and smells good, that’s my motto. My estimations are in parenthesis
Ingredients
- Boneless, skinless chicken breasts and thighs
- Lemon juice (1 cup)
- Minced garlic (1 tbsp)
- Garlic pepper (1 tsp)
- Rosemary (2 tbsp)
- Salt and Pepper (to taste)
Combine ingredients and coat chicken in the mixture. Refrigerate for a few hours, occasionally turning the chicken to keep the coating even.
Grill or bake the chicken until juices run clear and enjoy!
